Product Description
Sketch is a 2 barrel production wine coming from 40 year old vines. Sketch is the wine that better explains the genius of Raúl Pérez. It is also the wine that put him on the map: Sketch is the wine he ages under the water on the Aurosa estuary at a depth of about 15-18m below sea level.
First, the must is macerated for 24 hours in a stainless steel tank. Afterwards, Sketch is aged in 750 litre used French oak barrels before the ageing under the sea takes place. The lack of oxygen, the greater amount of pressure under the sea and the low, but constant temperatures afect the ageing of the wine in a unique way, making it taste unlike any other wine. Because the grapes already have a nearly perfect acidity level, there is no malolactic fermentation.

Sketch has abundant aromas of citrus fruits, such as lemon combined with minerality and talc, showing also an unmistakable saline note.
Galicia
Similar to the aromas, the wine’s lavours are incredibly
packed and concentrated on the palate, with
huge, squeaky-clean flavours of minerals, citrus, and
fresh stone fruits and their skins. The wine shows
intense power with depth and finesse.
about half of the wine is aged for 12 months in used French oak barrels before it undergoes ageing under the sea for 60-90 days.
A remarkable wine that will complement a wide
variety of seafood and white meat dishes. Also perfect for creamy risottos, or dishes containing cream cheeses.
