Quinta Sardonia

Quinta Sardonia is a biodynamic project from Peter Sisseck and Jerome Bougnaud producing a unique Bordeaux-style wine with a unique blend of international varieties that are grown under biodynamic principles. This is a complex wine that is strongly inluenced by the nature of the region. Harvest in Quinta Sardonia takes place in late summer-toearly fall when the seven grape varieties each come to full term. Rather than harvesting all at once, the Quinta Sardonia team manages each plot independently to achieve ideal ripeness. Only then will harvest take place, tasting the grapes every day to ensure the perfect quality.

17 months in French oak barrels, 50% are new barrels, 50% 1-year-old
