Pago de Vallegarcía has been pioneer in Spain in planting,producing and marketing a wine developed with 100% Viognier grape variety. Released in 2003, it is a wine that continues to evolve, determined by the peculiarity of each vintage, which demands specific production and specific ageing in barrels in each harvest.This surprising and innovative wine is unique in Spain. It is complex, elegant and strikingly pleasant to all those who taste it. It is paradoxical to speak of a Dry white with structure and personal character, one of the best white wines of Spain, in an area where Dry white never stood out.Pre-fermentation cold maceration at 8º C for 12 hours. 70% fermentation in tank at a controlled temperature of 15 ºC.30% fermentation in barrel and ageing on lees for 4 months and a half. Afterwards, ageing 4 months and a half in French oak barrels, 11 months in bottle.
